Ingredients

  • 8 large flour tortillas
  • 2 cups refried red beans
  • 6 eggs
  • 1 tablespoon butter
  • 1 cup crumbled fresh cheese
  • 3/4 cup Honduran crema or sour cream
  • 1 avocado, sliced, optional
  • Salt and black pepper

Step-by-step instructions

  1. Warm the beans over low heat, adding a tablespoon of water if they are too thick.
  2. Beat the eggs with salt and pepper. Cook gently in butter until just set.
  3. Warm each tortilla in a dry skillet until flexible.
  4. Spread beans over half of each tortilla and add egg, cheese, crema and avocado.
