Ingredients
- 1 1/2 cups yellow cornmeal
- 1/2 cup all-purpose flour
- 1 tbsp baking powder
- 1 tsp kosher salt
- 1/2 tsp baking soda
- 2 large eggs
- 1 1/2 cups buttermilk
- 5 tbsp unsalted butter divided
Instructions
- Place a 10-inch cast-iron skillet in the oven and preheat to 425°F
- Whisk cornmeal, flour, baking powder, salt, and baking soda
- Whisk eggs, buttermilk, and 3 tablespoons melted butter separately
- Stir wet ingredients into dry just until combined
- Carefully add remaining butter to the hot skillet
- Pour in batter and smooth the top
- Bake 18 to 22 minutes until deeply golden
- Cool 10 minutes before slicing
