Southern smothered chicken is pure Sunday-supper comfort: bone-in chicken thighs seasoned with paprika, garlic and thyme, dredged in flour and browned until the skin is golden, then “smothered” in a rich gravy of slow-cooked onions, bell pepper and chicken broth and simmered until the meat is tender enough to fall off the bone.
Everything happens in one heavy skillet, and the flour from the browning thickens the gravy as it cooks, so you end up with a silky, savory sauce that begs to be spooned over white rice, mashed potatoes or warm biscuits. It is the kind of dinner that makes the whole house smell like fall.

Ingredients
For the chicken
- 6 bone-in, skin-on chicken thighs (about 2 1/2 lb / 1.1 kg)
- 1 tsp fine salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1/2 tsp dried thyme
- 1/4 tsp cayenne pepper (optional)
- 1/2 cup (65 g) all-purpose flour, for dredging
- 2 tbsp vegetable oil
For the onion gravy
- 2 tbsp unsalted butter
- 2 large yellow onions, halved and thinly sliced
- 1 green bell pepper, thinly sliced
- 4 garlic cloves, minced
- 3 tbsp all-purpose flour
- 2 1/2 cups (600 ml) low-sodium chicken broth
- 1 tsp Worcestershire sauce
- 1 bay leaf
- 1/2 cup (120 ml) heavy cream or whole milk
- Salt and black pepper, to taste
To serve
- 2 tbsp chopped fresh parsley or sliced green onions
- Cooked white rice, mashed potatoes or biscuits
Step-by-step method
-
Season the chicken. Pat the thighs very dry with paper towels. Mix the salt, pepper, garlic powder, onion powder, smoked paprika, thyme and cayenne and rub it all over the chicken, including under the skin where you can.
-
Dredge. Put the 1/2 cup flour in a shallow dish and dredge each thigh, shaking off the excess.
-
Brown the chicken. Heat the oil in a large, deep skillet or braiser over medium-high heat. Add the thighs skin side down and cook 5–6 minutes, without moving them, until the skin is deep golden. Flip and cook 3 minutes more. Transfer to a plate (they will finish cooking in the gravy).
-
Cook the onions. Pour off all but about 1 tablespoon of fat. Reduce the heat to medium, add the butter, onions and bell pepper and cook 8–10 minutes, stirring and scraping up the browned bits, until soft and golden.
-
Make the gravy. Stir in the garlic and cook 1 minute. Sprinkle the 3 tbsp flour over the onions and cook 2 minutes, stirring. Slowly pour in the broth while stirring, then add the Worcestershire sauce and bay leaf. Bring to a simmer; it will thicken slightly.
-
Smother and simmer. Return the chicken and any juices to the pan, skin side up, nestling it into the gravy. Cover, reduce the heat to low and simmer 30–35 minutes, until the chicken is very tender. (Or cover and bake at 350°F / 175°C for 40 minutes.)
-
Finish the gravy. Move the chicken to a platter. Remove the bay leaf, stir the cream into the gravy and simmer 2–3 minutes, until it coats the back of a spoon. Season with salt and pepper.
-
Serve. Spoon the onion gravy over the chicken, sprinkle with parsley or green onions and serve hot over rice, mashed potatoes or biscuits.
How to know it is done
The chicken is ready when an instant-read thermometer in the thickest part of a thigh (not touching the bone) reads at least 175°F (79°C) and the meat pulls easily from the bone. The onions should be completely soft and the gravy smooth, glossy and thick enough to coat a spoon.
Tips for the best result
- Dry the chicken well and do not crowd the pan; work in two batches if needed so the skin browns instead of steaming.
- Take your time with the onions: the deeper their color, the richer the gravy.
- Keep the skin above the gravy while it simmers so it stays as crisp as possible.
- If the gravy gets too thick, loosen it with a splash of broth; if too thin, simmer it uncovered a few minutes longer.
Variations and substitutions
- Boneless thighs or breasts: simmer boneless thighs 15–20 minutes and boneless breasts 12–15 minutes (to 165°F / 74°C).
- With mushrooms: add 8 oz (225 g) sliced cremini mushrooms with the onions.
- Dairy-free: skip the cream and use oil instead of butter; the gravy is still delicious.
- Smothered pork chops: use 4 bone-in pork chops and simmer 20–25 minutes, until 145°F (63°C).
- Extra Cajun kick: replace the seasoning blend with 1 tbsp Cajun seasoning and add a celery rib to the onions.
Storage and reheating
Refrigerate the chicken and gravy together in an airtight container up to 4 days, or freeze up to 3 months (thaw overnight in the fridge). Reheat covered in a skillet over medium-low heat with a splash of broth for 10–15 minutes, or in a 325°F (165°C) oven for about 20 minutes, until heated through.
