- 2 cups cold, firm mashed potatoes
- 4 oz (115 g) ham, diced
- 3 oz (85 g) mozzarella, cut into small cubes
- 1 egg
- 2 tablespoons flour
- 1 cup breadcrumbs
- Salt, black pepper and nutmeg
- Oil for frying
Step-by-step instructions
- Combine the mashed potatoes, ham, egg, flour and seasonings.
- Divide into 16 portions. Enclose one mozzarella cube in each and shape into cylinders.
- Roll the croquettes in breadcrumbs and press the coating gently.
- Heat 1/2 inch of oil to 350°F (175°C).
