Ingredients

  • 24 oz (680 g) frozen pearl onions
  • 2 tbsp (28 g) unsalted butter
  • 2 tbsp all-purpose flour
  • 1 1/2 cups (360 ml) whole milk
  • 1/2 cup (120 ml) heavy cream
  • 1 tsp fresh thyme leaves
  • 1/4 tsp ground nutmeg
  • 3/4 tsp kosher salt and 1/4 tsp white pepper

Instructions

  1. Simmer frozen onions in salted water for 6 minutes; drain well.
  2. Melt butter in a saucepan, whisk in flour and cook 1 minute without browning.
  3. Slowly whisk in milk and cream. Simmer 4–5 minutes until the sauce coats a spoon.
  4. Add thyme, nutmeg, salt and pepper.
  5. Fold in onions and simmer gently 8–10 minutes until tender and hot.
  6. Rest 5 minutes before serving so the sauce settles.

For make-ahead service, refrigerate up to two days and reheat slowly with a splash of milk.
