- 2 tbsp (28 g) unsalted butter
- 2 tbsp all-purpose flour
- 1 1/2 cups (360 ml) whole milk
- 1/2 cup (120 ml) heavy cream
- 1 tsp fresh thyme leaves
- 1/4 tsp ground nutmeg
- 3/4 tsp kosher salt and 1/4 tsp white pepper
Instructions
- Simmer frozen onions in salted water for 6 minutes; drain well.
- Melt butter in a saucepan, whisk in flour and cook 1 minute without browning.
- Slowly whisk in milk and cream. Simmer 4–5 minutes until the sauce coats a spoon.
- Add thyme, nutmeg, salt and pepper.
- Fold in onions and simmer gently 8–10 minutes until tender and hot.
- Rest 5 minutes before serving so the sauce settles.
