Ingredients

  • 2 lb (907 g) fresh green beans, trimmed
  • 5 tbsp (70 g) unsalted butter
  • 2/3 cup (70 g) sliced almonds
  • 2 garlic cloves, thinly sliced
  • 1 tsp lemon zest
  • 2 tbsp fresh lemon juice
  • 3/4 tsp kosher salt
  • 1/4 tsp black pepper

Instructions

  1. Bring a large pot of salted water to a boil and prepare a bowl of ice water.
  2. Boil beans 3–4 minutes until bright and crisp-tender; transfer to ice water, then drain and dry.
  3. Toast almonds in a wide dry skillet for 2–3 minutes and remove.
  4. Melt butter in the skillet and cook until amber and nutty, 3–4 minutes; add garlic for the final 30 seconds.
  5. Add beans, salt and pepper and toss over medium heat for 2–3 minutes.
  6. Remove from heat; add almonds, lemon zest and juice and serve immediately.

Cook’s Tips

Blanch beans a day ahead, dry thoroughly and refrigerate. Finish in the brown butter just before dinner.
