Ingredients
- 4 lb boneless beef chuck roast
- 2 tsp salt
- 1 tsp pepper
- 2 tbsp oil
- 1 large onion cut in wedges
- 4 garlic cloves
- 3 cups beef broth
- 2 tbsp tomato paste
- 1 tbsp Worcestershire sauce
- 1 tsp thyme
- 2 lb potatoes
- 5 carrots
- 2 tbsp cornstarch
Instructions
- Heat oven to 325°F
- Season roast and brown deeply in oil in a Dutch oven
- Remove roast and soften onion
- Add garlic, broth, tomato paste, Worcestershire, and thyme
- Return roast, cover, and braise 2 hours
- Add potatoes and carrots
- Cover and cook 60 to 90 minutes until fork-tender
- Transfer meat and vegetables
- Thicken cooking liquid with cornstarch slurry and serve as gravy
