Ingredients

  • 20 jumbo pasta shells
  • 15 oz ricotta cheese
  • 1 cup chopped spinach
  • 1 egg
  • 1 cup shredded mozzarella, divided
  • 1/2 cup grated Parmesan
  • 24 oz marinara sauce
  • Salt and black pepper

Instructions

  1. Cook shells until just tender, then drain and cool slightly.
  2. Mix ricotta, spinach, egg, half the mozzarella, Parmesan, salt, and pepper.
  3. Spread marinara in a baking dish and fill shells with the ricotta mixture.
  4. Arrange shells in the dish, spoon over more sauce, and top with remaining mozzarella.
  5. Bake at 375°F for 25 to 30 minutes until hot and bubbly.

Tips for the best results

Cook the pasta just to al dente, salt the pasta water well, and save a little pasta water to loosen the sauce if needed. Fresh herbs and Parmesan can add even more flavor at the end.
