Step-by-step instructions

  1. Pat the cheese dry and, if time allows, refrigerate uncovered for 20 minutes.
  2. Heat a small cast-iron skillet over medium-high for 3 minutes and brush with oil.
  3. Add the provolone and cook for 3 to 4 minutes, until a golden base forms.
  4. Carefully turn and cook for 2 to 3 minutes more.
  5. Top with oregano, red pepper and black pepper. Serve immediately in the skillet with toast.
