Matambre a la pizza is an Argentine favorite: a thin, flavorful cut of beef cooked until tender, then topped just like a pizza with tomato sauce, sliced tomato, mozzarella and oregano, and finished until the cheese is melted and golden.
Matambre is the thin cut that sits between the hide and the ribs (often sold as rose meat or flap). If you cannot find it, a whole flank steak is the closest substitute. It is a crowd-pleaser at any cookout or family lunch.
Why you’ll love it
- Two favorites in one: tender beef with all the toppings of a cheese pizza.
- Feeds six with just seven simple ingredients.
- A true Argentine classic for the grill or the oven.
Quick facts
Prep: 20 min
Cook: 55 min
Total: 1 hr 15 min
Servings: 6
Estimated cost per serving: $5.30
Ingredients
- 1 beef matambre (rose meat or flank steak), 2 1/2 to 3 1/4 lb (1.2 to 1.5 kg)
- 1 cup tomato sauce
- 2 cups shredded mozzarella
- 1 tomato, sliced
- 1 tsp dried oregano
- 2 tbsp oil
- Salt and pepper
Step-by-step method
-
Cook until tender. Season the matambre and cook it covered over medium-low heat, or in the oven at 350°F (177°C), until tender, 35 to 45 minutes.
-
Transfer. Move it to a baking sheet, fat side down.
-
Add the toppings. Spread with the tomato sauce and top with the mozzarella, tomato slices and oregano.
-
Melt the cheese. Bake or broil for 10 to 12 minutes, until the cheese is melted and golden.
-
Rest and slice. Let it rest for 5 minutes and cut into portions.
How to know it is done
The matambre is ready when a fork slides easily into the meat and the cheese on top is fully melted, bubbling and lightly browned. Times are estimates, so go by tenderness and color.
Tips for the best result
- Measure and prep all the ingredients before you start.
- Taste and adjust the salt and seasoning at the end of cooking.
- Do not skip the resting time: it makes the meat easier to slice and keeps it juicy.
Storage and reheating
Store leftovers in a tightly sealed container in the refrigerator for up to 3 days. Reheat gently, ideally in the oven, to keep the best texture.
