Ingredients

  • 2 cups precooked white cornmeal
  • 2 1/2 cups warm water
  • 1 teaspoon salt
  • 1 tablespoon melted butter
  • 1 cup shredded mozzarella
  • 4 oz (115 g) white cheese, cut into 8 slices
  • Oil for the skillet

Step-by-step instructions

  1. Combine the water, salt and butter. Gradually add the cornmeal and rest for 5 minutes.
  2. Mix in the mozzarella and knead gently until the dough no longer cracks.
  3. Divide into 8 balls. Flatten, place a cheese slice in the center, seal and shape into 1/2-inch-thick disks.
  4. Heat an oiled skillet over medium. Cook for 7 to 9 minutes per side, until golden and cooked through.
  5. Rest for 2 minutes before serving so the cheese is not dangerously hot.

Tips and variations

  • If the dough cracks, add water one teaspoon at a time.
  • Keep the arepas evenly thick for consistent cooking.
