Ingredients
- 2 1/2 cups masa harina
- About 2 1/4 cups warm water
- 1 teaspoon salt
- 1 cup shredded mozzarella
- 3/4 cup thick refried beans
- 3/4 cup finely chopped cooked pork
- 1 teaspoon oil
- Curtido and red salsa, for serving
Step-by-step instructions
- Mix the masa harina, salt and water into a soft dough. Rest for 10 minutes.
- Combine the cheese, beans and pork for the filling.
- Divide the dough into 10 balls. Make a well, add 2 tablespoons filling, seal and flatten to 1/4 inch.
- Heat a lightly oiled griddle or skillet over medium-high.
- Cook for 3 to 4 minutes per side, until spotted brown and cooked through. Serve with curtido and salsa.
