Ingredients

  • 2 1/2 cups masa harina
  • About 2 1/4 cups warm water
  • 1 teaspoon salt
  • 1 cup shredded mozzarella
  • 3/4 cup thick refried beans
  • 3/4 cup finely chopped cooked pork
  • 1 teaspoon oil
  • Curtido and red salsa, for serving

Step-by-step instructions

  1. Mix the masa harina, salt and water into a soft dough. Rest for 10 minutes.
  2. Combine the cheese, beans and pork for the filling.
  3. Divide the dough into 10 balls. Make a well, add 2 tablespoons filling, seal and flatten to 1/4 inch.
  4. Heat a lightly oiled griddle or skillet over medium-high.
  5. Cook for 3 to 4 minutes per side, until spotted brown and cooked through. Serve with curtido and salsa.

Tips and variations

  • Moisten your hands with water and oil to prevent sticking.
  • Patch any crack with a little damp masa.
