Ingredients
- 2 lb (907 g) fresh green beans, trimmed
- 5 tbsp (70 g) unsalted butter
- 2/3 cup (70 g) sliced almonds
- 2 garlic cloves, thinly sliced
- 1 tsp lemon zest
- 2 tbsp fresh lemon juice
- 3/4 tsp kosher salt
- 1/4 tsp black pepper
Instructions
- Bring a large pot of salted water to a boil and prepare a bowl of ice water.
- Boil beans 3–4 minutes until bright and crisp-tender; transfer to ice water, then drain and dry.
- Toast almonds in a wide dry skillet for 2–3 minutes and remove.
- Melt butter in the skillet and cook until amber and nutty, 3–4 minutes; add garlic for the final 30 seconds.
- Add beans, salt and pepper and toss over medium heat for 2–3 minutes.
- Remove from heat; add almonds, lemon zest and juice and serve immediately.
