- 1 unbaked 9-inch pie crust
- 2 cups (490 g) mashed roasted sweet potato
- 3 large eggs
- 2/3 cup (160 ml) maple syrup
- 1/2 cup (120 ml) heavy cream
- 3 tbsp bourbon
- 3 tbsp (42 g) melted butter
- 1 tsp cinnamon
- 1/2 tsp ginger and 1/4 tsp nutmeg
- 1/2 tsp kosher salt
Instructions
- Heat oven to 400°F (205°C). Line crust with parchment and weights; bake 15 minutes, remove weights and bake 5 minutes.
- Reduce oven to 350°F (175°C). Whisk sweet potato, eggs, maple syrup, cream, bourbon, butter, spices and salt until smooth.
- Pour filling into the warm crust and shield the edge if already dark.
- Bake 45–50 minutes until edges are set and the center has a gentle wobble.
- Cool completely on a rack for at least 2 hours.
- Slice with a clean knife and serve with lightly whipped cream if desired.
