Ingredients
- 12 oz andouille sausage, sliced
- 1 lb large shrimp, peeled and deveined
- 1 tbsp oil
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery ribs, diced
- 3 garlic cloves, minced
- 1 1/2 cups long-grain white rice
- 1 can diced tomatoes, 14.5 oz
- 3 cups chicken broth
- 1 tbsp Creole seasoning
- 1 tsp smoked paprika
- 1 bay leaf
- 2 green onions, sliced
Step-by-step method

Brown sausage in oil over medium-high heat and transfer to a plate.

Cook onion, bell pepper and celery 5 minutes. Add garlic for 30 seconds.

Stir in rice, tomatoes, broth, Creole seasoning, paprika and bay leaf. Return sausage.

Bring to a boil, cover, reduce to low and cook 20β22 minutes until rice is nearly tender.

Scatter shrimp over rice, cover and cook 5β7 minutes until shrimp are opaque.

Rest 5 minutes, fluff gently, remove bay leaf and garnish with green onions.
