Tender spice-rubbed beef, rich jus, and tangy giardiniera tucked into sturdy Italian rolls.
The Italian beef sandwich is a Chicago icon that grew out of the city’s Italian-American neighborhoods. The beef is slow-braised with herbs and spices, sliced thin and soaked in its own jus, then topped with giardiniera. Ask for it “dipped” if you like the whole roll soaked.

Ingredients
- 3 1/2 pounds boneless beef chuck roast
- 2 teaspoons kosher salt
- 1 teaspoon black pepper
- 2 tablespoons olive oil
- 1 large onion, sliced
- 4 garlic cloves, minced
- 4 cups low-sodium beef broth
- 1 tablespoon Worcestershire sauce
- 2 teaspoons dried oregano
- 1 teaspoon dried basil
- 1 teaspoon crushed red pepper flakes
- 1/2 teaspoon fennel seeds, crushed
- 8 Italian sandwich rolls
- 1 cup drained hot or mild giardiniera
Instructions
- Heat the oven to 325°F. Pat the beef dry and season all over with salt and pepper.
- Heat oil in a Dutch oven over medium-high heat. Brown the beef deeply on all sides, 10 to 12 minutes total, then transfer it to a plate.
- Cook the onion for 5 minutes. Add the garlic, broth, Worcestershire, oregano, basil, red pepper, and fennel; scrape up the browned bits.
- Return the beef to the pot. Cover and braise in the oven for 2 1/2 to 3 hours, until fork-tender.
- Transfer the beef to a board. Rest for 15 minutes, then shred or slice very thinly across the grain.
- Skim excess fat from the jus and return the meat to it for 10 minutes over low heat.
- Pile the juicy beef into warm rolls, spoon over extra jus, and top with giardiniera. Serve additional jus for dipping.
Tips for the Best Results
- Choose sturdy rolls that can absorb jus without falling apart.
- Chill the cooked beef briefly if you prefer very thin, deli-style slices.
