Budín inglés (“English pudding”) is a must at afternoon tea in Argentina and Uruguay, and on every Christmas table. It’s a dense, moist butter pound cake packed with raisins, candied fruit and walnuts. The secret to keeping the fruit from sinking: toss it in flour before folding it in.

  • Makes: 1 loaf, 9 x 5 inches (10 slices)
  • Prep time: 20 minutes
  • Bake time: 55 minutes
  • Total time: 1 hour 15 minutes

Ingredients

  • 14 tablespoons (200 g) softened butter
  • 1 cup (200 g) sugar
  • 4 eggs, room temperature
  • 2 cups (250 g) all-purpose flour plus 2 teaspoons baking powder, plus 1 tablespoon flour for the fruit
  • Zest of 1 orange
  • 1 teaspoon vanilla extract
  • 3 1/2 tablespoons (50 ml) rum, brandy or orange juice
  • 2/3 cup (100 g) raisins
  • 2/3 cup (100 g) diced candied fruit
  • 1/2 cup (60 g) chopped walnuts
  • Powdered sugar, for dusting (optional)

Instructions

  1. Soak the raisins in the rum or orange juice while you prepare everything else.
  2. Prep the pan and oven. Preheat the oven to 340°F (170°C). Butter and flour a 9 x 5-inch loaf pan, or line it with parchment.
  3. Cream the butter. Beat the butter and sugar for 5 minutes until pale and fluffy. Add the zest and vanilla.
  4. Add the eggs one at a time, beating well after each.
  5. Add the flour. Whisk the flour with the baking powder and fold it in two additions with a spatula. Stir in the soaking liquid from the raisins.
  6. Flour the fruit. Drain the raisins and toss them with the candied fruit, walnuts and 1 tablespoon of flour. Fold into the batter.
  7. Bake. Pour into the pan, smooth the top and bake 50 to 60 minutes, until a toothpick in the center comes out clean. If it browns too fast, tent with foil.
  8. Cool. Let rest 10 minutes in the pan, then unmold and cool on a rack. Dust with powdered sugar.

Tips

  • Better the next day: wrapped in plastic, it gets moister and more flavorful overnight. Keeps for a week.
  • Chocolate version: swap the candied fruit for 2/3 cup of chocolate chips.
  • A crack on top is normal, even desirable. It’s the sign of a well-risen loaf.
