Ingredients
- 2 cups precooked white cornmeal
- 2 1/2 cups warm water
- 1 teaspoon salt
- 1 tablespoon melted butter
- 1 cup shredded mozzarella
- 4 oz (115 g) white cheese, cut into 8 slices

Step-by-step instructions
- Combine the water, salt and butter. Gradually add the cornmeal and rest for 5 minutes.
- Mix in the mozzarella and knead gently until the dough no longer cracks.
- Divide into 8 balls. Flatten, place a cheese slice in the center, seal and shape into 1/2-inch-thick disks.
- Heat an oiled skillet over medium. Cook for 7 to 9 minutes per side, until golden and cooked through.
- Rest for 2 minutes before serving so the cheese is not dangerously hot.
