Ingredients

  • 8 oz (225 g) Swiss chard, thick stems removed
  • 2 eggs
  • 1/2 cup milk
  • 3/4 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/3 cup grated cheese
  • 1 garlic clove, minced
  • 3/4 teaspoon salt
  • Black pepper and nutmeg
  • Oil for shallow frying

Step-by-step instructions

  1. Chop the chard, cook it in a skillet for 2 minutes and squeeze out the liquid thoroughly.
  2. Whisk the eggs and milk. Stir in the flour, baking powder, cheese, garlic, salt, pepper and nutmeg.
  3. Fold in the chard; the mixture should drop slowly from a spoon.
  4. Heat 1/4 inch of oil over medium. Fry spoonfuls for about 2 minutes per side.
  5. Drain on a rack or paper towels, season lightly and serve with lemon.
