Ingredients

  • 1 cup (240 ml) water
  • 2 tablespoons butter
  • 1 tablespoon sugar
  • 1/4 teaspoon salt
  • 1 cup (125 g) all-purpose flour
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • Oil for frying
  • For coating: 1/2 cup (100 g) sugar and 1 1/2 teaspoons cinnamon
  • For the sauce: 4 oz (115 g) dark chocolate, 1/2 cup (120 ml) heavy cream

Instructions

  1. Heat the cream until steaming, pour over the chopped chocolate, rest 2 minutes and stir until smooth. Set aside.
  2. Bring the water, butter, sugar and salt to a boil. Add the flour all at once and stir with a wooden spoon for 1 minute, until a smooth ball forms.
  3. Cool 5 minutes, then beat in the egg and vanilla until glossy.
  4. Heat 2 inches of oil to 350°F (175°C). Pipe 5-inch strips of dough into the oil, cutting with scissors.
  5. Fry 2 to 3 minutes, turning, until deep golden. Drain briefly on paper towels.
  6. Roll in cinnamon sugar while warm and serve with the chocolate sauce.

Tips for the best results

Let the dough cool slightly before adding the egg so it does not scramble. Fry only a few at a time so the oil temperature stays steady.
