Ingredients

  • 1 unbaked 9-inch pie crust
  • 2 cups (490 g) mashed roasted sweet potato
  • 3 large eggs
  • 2/3 cup (160 ml) maple syrup
  • 1/2 cup (120 ml) heavy cream
  • 3 tbsp bourbon
  • 3 tbsp (42 g) melted butter
  • 1 tsp cinnamon
  • 1/2 tsp ginger and 1/4 tsp nutmeg
  • 1/2 tsp kosher salt

Instructions

  1. Heat oven to 400°F (205°C). Line crust with parchment and weights; bake 15 minutes, remove weights and bake 5 minutes.
  2. Reduce oven to 350°F (175°C). Whisk sweet potato, eggs, maple syrup, cream, bourbon, butter, spices and salt until smooth.
  3. Pour filling into the warm crust and shield the edge if already dark.
  4. Bake 45–50 minutes until edges are set and the center has a gentle wobble.
  5. Cool completely on a rack for at least 2 hours.
  6. Slice with a clean knife and serve with lightly whipped cream if desired.

Cook’s Tips

Roast rather than boil the potatoes to avoid watery filling. Replace bourbon with orange juice for an alcohol-free pie.
