Quick facts
Prep: 10 min
Chill: 30 min
Total: 40 min
Servings: 20 bites
Estimated cost per serving: $0.25
Ingredients
- 1 1/4 cups old-fashioned rolled oats
- 1/2 cup creamy natural peanut butter
- 1/3 cup maple syrup
- 1/4 cup ground flaxseed
- 1/3 cup mini dairy-free chocolate chips
- 1 tsp vanilla extract
- Pinch of salt
- 1–2 tbsp plant milk, if needed
Step-by-step method
-
In a large bowl, stir the peanut butter, maple syrup, vanilla and salt until smooth. If your peanut butter is very thick, warm it for 15 seconds in the microwave.
-
Add the oats, flaxseed and chocolate chips and stir until everything is evenly coated.
-
If the mixture feels too dry to hold together, add plant milk a tablespoon at a time. If it is too sticky, add a few more oats.
-
Chill the mixture 15 minutes so it is easier to shape.
-
Roll into 1-inch balls (about 1 tablespoon each) and refrigerate at least 15 minutes more to firm up.
Tips for the best result
- Slightly damp hands keep the mixture from sticking while you roll.
- Nut-free version: use sunflower seed butter instead of peanut butter.
- Swap the chocolate chips for raisins, chopped dates or shredded coconut.
Storage
Keep in an airtight container in the fridge up to 1 week, or freeze up to 3 months. They thaw in about 10 minutes at room temperature.
