Revuelto gramajo is a classic from Buenos Aires and Montevideo: thin, crispy shoestring potatoes folded into soft, creamy scrambled eggs with ham, onion and peas.
It is the kind of dish you find in every neighborhood restaurant in the River Plate region, and it is easy to make at home. The trick is to keep the eggs creamy and add the fries at the very end, so you get crispy and tender bites in every forkful.

Ingredients
- 1 3/4 lb (800 g) potatoes
- 6 large eggs
- 7 oz (200 g) cooked ham, cut into strips
- 3/4 cup (100 g) cooked peas
- 1 small onion, thinly sliced
- 2 cups (500 ml) oil, for frying
- 1 tsp salt
- 1/2 tsp pepper
- 2 tbsp chopped parsley
Step-by-step method
-
Cut the potatoes. Peel the potatoes, cut them into very thin matchsticks and dry them completely.
-
Fry the potatoes. Fry them in batches at 350°F (175°C) until golden, 3 to 4 minutes; drain and salt.
-
Cook the filling. In a large skillet with 1 tbsp of the oil, cook the onion for 5 minutes, then add the ham and peas.
-
Scramble the eggs. Lightly beat the eggs with salt and pepper. Pour them into the skillet and stir over low heat for 1 to 2 minutes.
-
Add the potatoes. While the eggs are still creamy, add the potatoes, stir for 30 seconds and remove from the heat.
-
Finish and serve. Sprinkle with parsley and serve right away.
How to know it is done
Take it off the heat when the eggs are set but still glossy and creamy.
Tips for the best result
- Measure and prep all the ingredients before you start.
- Dry the potato sticks very well before frying so they get crispy and the oil does not splatter.
- For a lighter version, bake the potatoes with 2 tbsp of oil instead of frying them.
Storage and reheating
Revuelto gramajo is best enjoyed right away. Leftovers can be refrigerated for 1 day, although the potatoes lose their crunch.
