Southern fried okra is a true Southern side dish: bite-size rounds of fresh okra soaked in buttermilk, tossed in a seasoned cornmeal coating and fried until golden and crunchy.
Done right, it is crisp on the outside, tender inside and not slimy at all. Serve it hot next to fried chicken, catfish, pork chops or a big pot of beans, and watch it disappear straight from the platter.
Why you’ll love it
- Super crunchy cornmeal crust with a little smoky kick.
- Never slimy, thanks to the buttermilk soak and quick, hot frying.
- Ready in 30 minutes with simple pantry ingredients.

Ingredients
For the okra
- 1 lb (450 g) fresh okra, stems trimmed, cut into 1/2-inch (1.25 cm) rounds
- 1 cup (240 ml) buttermilk
For the coating
- 3/4 cup (105 g) fine or medium yellow cornmeal
- 1/2 cup (65 g) all-purpose flour
- 1 tsp fine salt
- 1/2 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp cayenne pepper (optional)
For frying
- About 3 cups (720 ml) vegetable or peanut oil (enough for 1 inch / 2.5 cm in the skillet)
- Flaky or kosher salt, for finishing
Step-by-step method
-
Soak the okra. Place the cut okra in a bowl, pour the buttermilk over it and stir. Let it soak 10 minutes while you prepare the coating.
-
Mix the coating. In a large bowl or zip-top bag, combine the cornmeal, flour, salt, pepper, garlic powder, smoked paprika and cayenne.
-
Heat the oil. Pour about 1 inch (2.5 cm) of oil into a large cast iron or heavy skillet and heat over medium-high to 350°F (175°C). Set a wire rack over a sheet pan or line a plate with paper towels.
-
Coat the okra. Working in batches, lift the okra out of the buttermilk with a slotted spoon, letting the excess drip off. Toss it in the coating until fully covered, then shake off the extra in a strainer.
-
Fry. Add one batch to the hot oil in a single layer. Fry 3–4 minutes, turning once or twice, until deep golden brown and crisp. Avoid stirring too much so the coating stays on.
-
Drain and serve. Transfer to the rack, sprinkle right away with a pinch of salt and repeat with the remaining okra, letting the oil come back to 350°F between batches. Serve hot.
How to know it is done
The okra is ready when the coating is deep golden brown, sounds crunchy when tapped with tongs and a test piece is tender inside. If the coating is pale or soft, the oil is not hot enough: fry a minute longer and let the oil reheat before the next batch.
Tips for the best result
- Choose small, bright green pods about 3–4 inches long; large pods can be woody.
- If you rinse the okra, dry it completely before cutting to limit sliminess.
- Use a thermometer and keep the oil at 350°F; too cool makes greasy okra, too hot burns the cornmeal.
Variations and substitutions
- Air fryer: coat as directed, spray well with oil and air fry at 400°F (200°C) for 12–14 minutes, shaking halfway.
- Oven-baked: spread on an oiled sheet pan, drizzle with oil and bake at 425°F (220°C) for 20–25 minutes, turning once.
- Frozen okra: use cut frozen okra, thawed and patted very dry.
- Gluten-free: replace the flour with cornstarch and use certified gluten-free cornmeal.
- Dipping sauce: serve with remoulade, ranch or a spicy mayo made with hot sauce.
Storage and reheating
Fried okra is best eaten right away. Refrigerate leftovers in an airtight container up to 2 days. Reheat in a 400°F (200°C) oven or air fryer for 4–5 minutes to bring back the crunch; the microwave makes it soggy. Freezing is not recommended.
