If the only broccoli you remember is the soft, steamed kind, roasted broccoli will change your mind in one bite. In a very hot oven the florets turn tender inside while the edges get crisp, nutty and deeply browned, and the little buds catch every bit of olive oil and seasoning. In this version, minced garlic and a generous handful of Parmesan go on near the end, so the cheese melts into a lacy, savory crust instead of burning, and a squeeze of fresh lemon brightens everything right before serving.
It is one of the easiest vegetable sides you can make: one sheet pan, a few pantry ingredients and about 20 minutes in the oven. That makes it a smart choice for Thanksgiving, when you need a green vegetable that is light and fresh next to the turkey, the mashed potatoes and the casseroles, and it fits right into the oven while the bird rests. It is just as welcome next to a roast chicken, pork chops or a Sunday steak all fall and winter.
Why you’ll love it

- Bright and light: garlic, Parmesan and lemon balance a rich holiday menu.
- Fast and budget friendly: one sheet pan, about 35 minutes and roughly $1.25 per serving.

Ingredients
For the broccoli
- 2 large heads broccoli (about 2 1/2 lb / 1.1 kg), cut into 1 1/2-inch (4 cm) florets, stems peeled and sliced (about 10 cups)
- 3 tbsp (45 ml) extra-virgin olive oil
- 3/4 tsp kosher salt
- 1/4 tsp black pepper
- 1/4 tsp crushed red pepper flakes (optional)
For the finish
- 3 garlic cloves, minced
- 1/2 cup (45 g) finely grated Parmesan cheese
- 1 tsp finely grated lemon zest
- 1 tbsp (15 ml) fresh lemon juice
- 2 tbsp toasted sliced almonds or pine nuts (optional)
Step-by-step method
-
Heat the oven and pan. Place a rack in the lower third of the oven, set a large rimmed sheet pan (about 18×13 inches / 46×33 cm) on it and preheat to 425°F (220°C). A hot pan gives the broccoli a head start on browning.
-
Dry the broccoli. Rinse the florets and dry them very well in a salad spinner or with a clean kitchen towel. Any water left on them will steam the broccoli instead of roasting it.
-
Season. In a large bowl, toss the broccoli with the olive oil, salt, black pepper and red pepper flakes until every floret is lightly coated.
-
Roast. Carefully take the hot pan out of the oven and spread the broccoli in a single layer, cut sides down where possible. Roast 15 minutes, until the undersides are browned.
-
Add the garlic and cheese. Remove the pan, sprinkle the garlic over the broccoli, toss with a spatula and spread it out again. Scatter the Parmesan evenly on top and roast 5 to 8 minutes more, until the cheese is melted and golden and the florets are crisp at the edges.
-
Finish and serve. Sprinkle with the lemon zest, drizzle with the lemon juice, scatter the almonds on top if using and serve hot, scraping up the crispy cheese from the pan.
How to know it is done
The broccoli is ready when the stems are tender enough for a fork or the tip of a knife to slide in easily but still have a little bite, the tops of the florets are crisp and dark brown in spots, and the Parmesan has melted into a golden, lacy crust. A few deeply browned, almost charred edges are a good sign; they add a lot of flavor. If the florets are browned but the stems are still hard, they were cut too big: roast 3 to 5 minutes more.
Tips for the best result
- Do not crowd the pan; if the florets touch too much they steam. Use two pans if needed.
- Cut the florets so they have a flat side, which browns best against the hot pan.
- Do not throw away the stems: peel them and slice them 1/4 inch (6 mm) thick; they roast beautifully.
- Add the garlic and Parmesan only for the last minutes so they do not burn and turn bitter.
- Season with lemon at the very end, just before serving, so it stays bright.
Variations and substitutions
- Broccoli and cauliflower: use 1 head of each; cauliflower may need 3 to 5 more minutes.
- With bacon: scatter 4 slices of crisp crumbled bacon over the broccoli before serving.
- Balsamic glaze: skip the lemon juice and drizzle with 1 tbsp balsamic glaze.
- Spicy honey: drizzle with 1 tbsp hot honey right out of the oven.
- Dairy-free: omit the Parmesan and toss with 2 tbsp nutritional yeast and the toasted almonds.
- Broccolini: use 2 lb (900 g) broccolini, left whole, and roast 12 to 15 minutes in total.
Make ahead
Cut, wash and dry the broccoli up to 2 days ahead and keep it in a zip-top bag lined with a paper towel in the refrigerator. Grate the Parmesan, mince the garlic and zest the lemon the morning of your dinner and keep them covered in the refrigerator. On Thanksgiving, roast the broccoli while the turkey rests; it only needs about 20 minutes and tastes best straight from the oven.
Storage and reheating
Store leftovers in an airtight container in the refrigerator for up to 3 days. For the best texture, reheat on a sheet pan in a 400°F (200°C) oven or in an air fryer for 5 to 7 minutes, until hot and crisp again; the microwave works but makes the broccoli softer. Leftovers are also great chopped into pasta, omelets or grain bowls. Freezing is not recommended, because roasted broccoli turns mushy when thawed.
